Sweet Sesame Ginger BBQ Chicken over Jasmine Rice

INGREDIENTS

  • 1 Cup Della Jasmine Rice
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 tsp of fresh ginger, minced 
  • 2 pcs of garlic, minced
  • 2 chicken breasts, cut into 1-inch bite-sized pieces
  • salt/pepper to taste
  • ½ can of pineapple chunks with juice
  • 1/3 cup BBQ sauce, whichever you like
  • 1 tbsp cornstarch + 1 tbsp water, for thickening (optional)
  • 1 tbsp sesame seeds toasted – garnish

Step 1

  • Prepare the Della Jasmine rice as instructed. 
  • Heat a tiny skillet on medium heat. Toast Sesame seeds for a few minutes. Stirring frequently. Set aside.

Step 2

  • Heat up a new skillet on medium heat. Add oil, onion and sauté until transparent. Stir in garlic and ginger and cook until fragrant, about 1 minute. Stir in chicken and brown on all sides for 3-4 minutes. 

Step 3

  • Add in pineapple mixture, BBQ sauce of your choice, salt and pepper. Simmer and stir frequently for 3-5 minutes. Then combine corn starch and water. Pour into your pan and stir until thickened to your liking.

Step 4

  • Serve with Della Jasmine White Rice and sprinkled toasted sesame on top. Enjoy!
